Fresh Mozzarella Stuffed Meatballs

The other night on Iron Chef America, the secret ingredient was mozzarella! My fav!  The challenger made fresh mozzarella stuffed meatballs, and they looked a-maz-ing!  Ever since then, I couldn't stop thinking about those ooey-gooey balls of goodness, so last night I decided to try my hand at some.

Ingredients:
1 lb. hamburger meat
1/2 cup bread crumbs
1/4 cup finely grated parmesan
1/2 tbsp. chopped basil
1/2 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp black pepper
1 clove garlic, minced
1/8 tsp. ground cayenne pepper
1 egg
8 small chunks of fresh mozzarella

 Mix all the above ingredients (except the fresh mozzarella) together until combined.

Roll into a ball and make a hole for a small chunk of fresh mozzarella.

Form into a ball around the fresh mozzarella.  Makes approximately eight.

Brown the meatballs on each side in some olive oil, and then transfer them to a baking sheet.  Pop them into a 400 degree oven for 20 minutes or until done in the center.

 Ready to eat with some noodles and sauce!

  2. how funny, Danielle and I were planning on making those for Dirty Jersey Thursday this week! Did you love them? I'm going to try them with turkey!
