- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1 tablespoon Italian seasoning
- pinch of salt
- pinch of red pepper flakes
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup cubed pepperoni
- 1/2 cup store-bought pizza sauce
Preheat the oven to 350 degrees. Grease muffin pan (regular or mini size). In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes; whisk in the milk and egg.
Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes. This is a very important step, because before I let it stand, it was very soupy but 10 minutes later, it had really thickened up.
Stir the batter and divide among muffin cups. Bake until puffed and golden, 20 to 25 minutes. (Mine took 25 minutes.)
The recipe actually says to use a mini-muffin pan, but I decided to use a regular one. It made nine regular size muffins, so that's up to you whether or not to use a mini-muffin pan.
Serve with warm pizza sauce for dipping - yum-my!
Super simply recipe; super delicious meal. They were so cheesy inside and really had a good taste. We ate every last one. Pizza bites have been officially added to the Sumrall Recipe book.
